Fall Favorite Recipe!

Fall Favorite - 
Slow Cooked Pork Chops with Sweet Potatoes and Apples

You'll need:
4 Pork Chops 
3 Golden Delicious Apples (cored and sliced, skins on)
2 Sweet Potatoes (peeled and chopped)
1 Onion (chopped)
Chicken Broth
Brown Sugar

Put all in crock pot and cook on low for at least 6 hours.

Enjoy with some long grain and wild rice.
And enjoy that delicious aroma that's going to fill up your house!

Anyone else have this song running through their head on repeat today?

Don't think I didn't just sing this, with full patriotic glory, in the Smith house.

It's Election Day, people!  
I hope you exercised your voice today and didn't take that opportunity for granted.

Even though we can differ in opinion, we can argue, we can agree... political dialogue, debate, and discussion is what makes this Country so great!

I'm proud to be an American.

Disney on Ice

This past Saturday H and I got a special treat, courtesy of Uncle Mitchell and Aunt Melanie...
Disney on Ice!!!

Group Picture; however, Disney had exploded in the BJCC, and H couldn't stop pointing at "Mow Mow" who was literally everywhere.


Little skeptical at first... not knowing what's about to happen.


Hey you!  Are you paying attention back there?
I hear Mow Mow's coming out here soon.


Why's everyone clapping?  I think I see some movement...  I'll stand for a better view...


MOW MOW MOW MOW MOW MOW MOW!!!!
And here is where I almost wet my pants at my child from laughing so hard.
Jumping, wiggling, squawking like a little chicken, screaming for Mow Mow.  
I almost couldn't hold on to him.
My mom would say I acted the same at a New Kids on the Block concert in 1992.  


Special thanks to Aunt Melanie for scoring us AH-mazing seats.


Where Mow Mow pretty much skated right up to us.  


Lion King!  My favorite.  
I may or may not have sung all the songs, much to the chagrin of our fellow parents around us.

H made it a good hour and a half, before his little self gave up.  
We hoisted him outta there pretty quickly and came back home for some delicious chili, if I do say so myself.
And oh yeah... watched the Crimson Tide play the most nerve-wracking game of all time.

Happy Halloween!

My little giraffe had a fabulous 2nd Halloween.

We started off the night of Trick or Treating by stopping by a sweet co-worker's home, Mrs. Clayton, who had prepared a precious little goodie bag (giraffe themed!) for H.
As well as some thoughtful treats for Mr. and Mrs. Smith.
Caffeine and candy - I think she knows me pretty well by now....

Despite H's ambivalent face, he had fun doing "quality control" on the Clayton's ceiling fan.




We ventured to Aunt Anna's, to carry on the tradition of "Aunt Nana's Halloween Fun."
She helped H and sweet Baby Girl Elizabeth learn how to answer the door.



I'm sorry, what was that Mommy?
 You're telling me I can't eat this delicious Kit Kat on a school night?


Hello precious cupcake!


Anyone else out there?  I have candy.


We actually made it out to the real trick or treating, but only for a few houses.

It was getting past someone's bedtime.

Raise your hand if you absolutely did not want to take a cheesy picture with Mommy.

Take Two.


Take Three.


But Aunt Nana?
Sure!  I'd love to smile preciously at the camera.
